YES, YOU GUYS JUST OPENED IN NOVEMBER. YOU ARE GLUTEN FREE. TALK A LITTLE BIT ABOUT YOUR INSPO BEHIND OPENING THIS PLACE. JUST GOOD FOOD THAT IS SAFE. TASTE IS REALLY IMPORTANT TO US, RIGHT? YOU SHARE GLUTEN FREE. YOUR ENTIRE FAMILY EATS GLUTEN FREE. THIS IS FOR THOSE PEOPLE WHO YOU KNOW MIGHT STRUGGLE TO FIND A PLACE WHERE THEY CAN SAFELY EAT. AND WE HAVE A LOT OF STUFF THEY CAN SAFELY HAVE. TALK TO ME ABOUT WHAT WE HAVE ON THE TABLE. WE HAVE BREAKFAST PIZZA. SO IT’S KIND OF LIKE A STAPLE HERE IN OMAHA BURT. AND THEN WE HAVE A BREAKFAST BAKE CASSEROLE WITH SIRUP AND POWDERED SUGAR WITH BLUEBERRIES INSIDE AND CREAM CHEESE. ALL THE GOODIES, ALL THE GOODIES. AND YOU SAID THE CINNAMON ROLL IS SOMETHING YOU GUYS ARE VERY, VERY POPULAR FOR. WHAT MAKES IT SO SPECIAL? I THINK THAT IT TASTES LIKE A CINNAMON ROLL, WHICH YOU DON’T FIND, AND A LOT OF PEOPLE HAVE TRIED WITHOUT SUCCESS, TO PRODUCE A GLUTEN FREE CINNAMON ROLL. AND USUALLY THE DOUGH IS LIKE FLAT, DOESN’T GET AIRY, RIGHT? IT CAN’T RISE. YEAH. SO OURS ARE JUST LIKE YOU REMEMBER, A CINNAMON ROLL SHOULD BE. YEAH. AND WHAT’S THE INGREDIENT THAT YOU’RE SUBSTITUTING FOR THE GLUTEN. SO WE USE ALL GLUTEN FREE FLOURS. AND THESE ARE SPECIAL BECAUSE THEY’RE ALSO EGG FREE WHICH IS KIND OF HOW IT BECAME LIKE THAT MAGIC DOUGH. YES. WHEN I SAW THE EGG. YOU’RE LIKE A MAGICIAN IN THE KITCHEN. THAT’S WHAT THEY SAY. Gregory says that after getting the life-altering diagnosis, she was tired of settling for bland gluten-free food for her and her children, who also have celiac disease.
