‘It’s 100 degrees in here’: Sno Cone truck, restaurants struggle to beat extreme heat
The high temperatures across the metro area over the last three days have made an impact on local restaurants and food trucks. Even the businesses that offer cool treats to beat the heat are struggling.

The high temperatures across the metro area over the last three days have made an impact on local restaurants and food trucks. Even the businesses that offer cool treats to beat the heat are struggling.
Owner of The Big O Sno, Jackie Caudillo, said high heat threatens the quality of her product.

“I get my flavors in New Orleans, so they’re legit. I’m not a franchise, so I can kind of control the quality of my flavors,” Caudillo said. “My syrups get hot. It affects the quality of the product as well. So it melts the ice prematurely. I take pride in my flavors, so it kind of puts a damper on the quality as well of what I’m putting out.”
It also creates a hot working environment.
“It’s 100 degrees in here right now, I’m sure,” Caudillo said Monday afternoon. “I don’t even have fryers or things going.”
Shutting down during her prime business season isn’t ideal, since it leaves her vulnerable for potential revenue loss.
“It kind of varies, couple hundred dollars to possibly $1,000,” Caudillo said.
Even with the AC running and a fan on high, Caudillo said, some days it’s not worth the risk.
“We’re working in a metal box, so we have to think about our own safety,” Caudillo said.
So on days when food trucks have canceled or closed down unexpectedly, Caudillo said she’s just asking the community to give food truck and restaurant owners grace.
“Some of the food trucks might have to skinny down their menu so they don’t have to turn on the fryers. They don’t have to turn on the grill so much and just have food warmers. Be patient with the temperatures. That’s all we can ask and support us when it’s not so darn hot,” Caudillo said.
